Quick Calzone
These Spinach and Cheese Calzones from Healthy Kids Inc. have fiber, folate and potassium. Serve with a low-sodium marinara sauce for dipping.
Makes 6
1 package refrigerated pizza dough
1 (10-ounce) package frozen chopped spinach, thawed and excess liquid squeezed out
1 cup part-skim ricotta cheese
1 cup shredded low-fat swiss cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1 pinch fresh ground black pepper
1/2 cup flour for dusting
1 tablespoon extra virgin olive oil for drizzling
1/2 cup low sodium marinara sauce
1. Preheat the oven to 425F. Line two baking sheets with parchment paper.
2. In a medium bowl, mix spinach with ricotta, Swiss, Parmesan, garlic powder and pepper.
3. Slice pizza dough into 6 equal pieces. Shape into balls, and stretch or roll out on a lightly floured surface into roughly 5-inch circles.
4. Arrange each circle on the lined baking sheets. Divide the spinach mixture into equal portions, and spread on one side of each circle, leaving a 1⁄2-inch border. Then fold the dough over the filling. Pinch and crimp the edges to seal. Cut a 1-inch vent in each, and lightly drizzle the tops with oil. Bake until golden brown, about 14 minutes.
