
Ingredients
1 Container of Randazzo’s Honest to Goodnesss Vodka Sauce
2 Ready-to-use pizza crusts
1/4 cup grated pecorino romano cheese
10-14 slices of provolone cheese
1 Bag baby arugula
1/2 tablespoon of fresh lemon juice
1 tablespoon extra virgin olive oil
Coarse sea salt
Black pepper
Small handful of fresh basil, sliced or ripped into small pieces
Olives, 2-3 for each glass speared with toothpicks
8 Martini glasses
Directions
Preheat oven to 450. Place each pizza crust on a pizza pan and pour on desired amount of vodka sauce. Sprinkle 1/8 cup pecorino romano cheese on each pie. Layer on provolone and bake for 12-15 minutes or until cheese is completely melted. While pizza is in the oven, prepare arugula salad: Mix arugula and basil together, sprinkle with coarse sea salt and pepper and toss with lemon juice and olive oil mixture. Place salad mixture at bottom of each martini glass. After pizza is removed from the oven and slightly cooled, cut into triangular slices. Place 2-3 slices on top of salad mixture. Garnish with olives.
