
Serves 4, Prep Time: 5 minutes, plus 15 minutes sitting time
1/4 cup capers, drained
3 tablespoons balsamic vinegar
4 teaspoons extra-virgin olive oil
2 pints cherry or grape tomatoes, halved
1/4 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
10 large fresh basil leaves, chopped
Combine capers, vinegar and oil in a small bowl and stir. Place tomatoes in a medium bowl, drizzle with the dressing, and toss gently. Season with salt and pepper and let sit for 15 minutes so flavors can meld. Sprinkle with chopped basil and serve.
