Ingredients:

4 tablespoons butter

2 cups diced Hormel Cure 81 ham

1 cup chopped fresh spinach

4 eggs, beaten

2 (7-inch) pita breads, cut in half

Directions: In a large skillet over medium-high heat, melt 2 tablespoons of the butter. Add ham and cook 2 minutes. Remove from the skillet and keep warm. In the same skillet, melt the remaining butter and add spinach. Cook briefly, until just wilted. Add eggs to spinach and cook until set, stirring occasionally. Spoon ham into pita halves and add egg mixture over ham. Serves 4.
