Iron Chef and mom of four Cat Cora, co-host of Bravo’s Around the World in 80 Plates, offers her best tips for getting picky little eaters to veggie up.
Go for DIY. Set out a pre-made pizza crust and containers of cooked ground turkey or beef, onion, broccoli, tomatoes, peppers and such, plus cheese. Let the kids create their own signature pizzas—and name them. Oliver’s Olive, anyone?
Have a movie-’n’-dip dinner night. Ditch the popcorn and instead cut carrot, celery, bell pepper and zucchini sticks and serve with everyone’s favorite, ranch dressing. Also try whole-grain chips with guacamole topped with low-fat shredded cheese. Finish with fruit pieces dipped in yogurt.
Let the kids shop. They’re far more likely to eat what they select. At the supermarket, get your little munchers to pick out colorful vegetables, then make a simple soup with their veggie choices and throw in some pasta shapes for fun.
