
On a hot summer night, these treats from Icebox Cakes, by Lauren Chattman ($18, www.amazon.com), will make you swoon.
You'll need:
8 mini doughnuts8 teaspoons orange marmalade1 1/2 cups vanilla ice cream 4 tablespoons sliced almonds
1. Slice each doughnut in half horizontally. Spread 1 teaspoon marmalade over the bottom half of each doughnut. Spoon 3 tablespoons softened ice cream over the marmalade on each. Place top halves of the doughnuts on top of ice cream.2. Roll the sides of the sandwiches in the almonds. Wrap each one in plastic wrap and freeze for 1 hour.
