
You can substitute Boursin for the goat cheese and uncooked scallions for the asparagus if you'd like. Love asparagus? Put two tips on top. Prepare up to an hour in advance.

Ingredients
1 French baguette
1/4 cup olive oil
Sea salt and freshly ground black pepper
6 ounces creamy fresh goat cheese (about 3?4 cup)
4 roasted red bell peppers (jarred), drained and cut into thin strips
20 asparagus tips, blanched
Directions
1. Preheat oven to 375F. Cut the baguette diagonally into 20 thin slices. Put the pieces on a baking tray and brush them with olive oil, then sprinkle with salt and black pepper. Bake 5 minutes, or until golden.
2. Arrange toasts on a plate and spread with cheese. Top with a pepper strip and an asparagus tip. Serve warm or at room temperature.
