
For many kids (and the kid in many of us), cranberry sauce is the whole point of Thanksgiving dinner. This bright and zingy version is sure to please everyone's inner child. Though you can whip this up in minutes, making it ahead of time actually improves the flavor.
Prep Time: 5 minutes, cook time: 2 to 3 minutes, servings: 8
Ingredients
1 (12-ounce) package fresh or frozen cranberries, picked over and rinsed
1 cup granulated sugar
1/2 cup orange juice or the juice of 1 large orange
2 teaspoons minced fresh rosemary
1/2 teaspoon finely grated orange zest (optional)
Directions
1. Let the kids put the cranberries, sugar, orange juice and rosemary in a large saucepan. While they watch, bring the mixture to a boil. Reduce heat to low and simmer 1 minute. (Some berries will pop and some will remain whole.) Remove the saucepan from the heat and let the kids stir in the zest (if using). Cover and cool, then refrigerate. Return to room temperature before serving.
Tip: Since cranberries are often on sale at this time of the year, freeze a supply so you can make baked goods in the spring. Also, if you use frozen cranberries for this recipe, leave out the zest; otherwise it will taste too bitter for kids.
