
Devilishly simple with a heavenly taste, these Asian-style peanut butter noodles make a nutritious afterschool snack for the kids and an easy take-to-work treat for you. For extra protein, add leftover chicken or chickpeas.

Ingredients
8 ounces whole-wheat spaghetti
1 cup snow peas
1/4 cup creamy peanut butter
3 tablespoons soy sauce
1 tablespoon olive oil or canola oil
1 tablespoon honey
1/8 teaspoon cayenne pepper (optional)
1/4 teaspoon grated ginger
1/2 cup grated carrots
1/4 cup chopped peanuts (optional)
1 scallion, chopped (optional)
1 tablespoon chopped parsley or cilantro (optional)
Directions
1. Cook spaghetti in boiling water according to package directions.
2. Meanwhile, kids can place snow peas in a microwave-safe dish. Add 1 tablespoon water, cover and microwave 1 minute to steam. Let kids watch as you carefully drain peas and set aside.
3. To make the sauce, kids can place peanut butter, soy sauce, oil, honey, cayenne pepper
(if using) and ginger into a large mixing bowl. Let them whisk ingredients together; then they can stir in cooked peas and grated carrots.
