
Spice up Father's Day with this special dish! If you'd like, skip the chorizo and substitute regular breakfast links seasoned with a little chili powder.
Prep Time: 8 minutes, cook time: 10 minutes, servings: 4
Ingredients
8 large eggs
1/4 cup milk
1 (4-inch) link chorizo, chopped
3 tablespoons chopped fresh cilantro
3 ounces cream cheese, cut into small pieces
Roasted cherry tomatoes (optional)*
Directions
1. In medium bowl, whisk together eggs and milk until just combined. You should see large bubbles as you whisk. Set aside.
2. In a large nonstick pan, cook chorizo for 5 minutes over medium heat. Add eggs and continue cooking, stirring constantly to make sure they cook evenly. Just before eggs are fully cooked, scatter cilantro and cream cheese over top. Gently stir until done.
3. Serve with toasted hearty rustic bread and roasted cherry tomatoes, if desired.
*Roasted tomatoes are simple to make. Just toss cherry tomatoes in a small amount of olive oil, season with salt and pepper and roast at 400F for 10 minutes.
