
Let your kids make their own pizzas! All they have to do is tuck sauce and cheese into a pita pocket. Include little dishes of cut-up veggies as part of the assembly line, and your young cooks will pocket a colorful, healthy assortment.
Prep time: 8 minutes, cook time: 8 minutes, serves: 4
Ingredients
2 (6-inch) whole-wheat pitas
1/2 cup grated mozzarella cheese
1/2 cup grated provolone or other cheese
1/2 cup prepared tomato sauce
Sliced peppers, mushrooms, onions and/or broccoli
4 sheets of foil, about 12 by 8 inches each
Directions
1. Preheat oven to 375F. Cut each pita in half with kitchen scissors or a sharp knife.
2. Combine cheeses in mixing bowl. Add tomato sauce and stir to blend well.
3. Put each pita half on a piece of foil. Help kids spoon 1?4 cup of the cheese mixture inside each pocket. Let kids place a few veggies on top of the cheese in each pocket. Wrap the pitas with the foil and seal shut.
4. Place foil-wrapped pitas on a cookie sheet and bake until cheese is melted, 8 to 10 minutes. Carefully remove from oven and cool 2 to 3 minutes before unwrapping.
